Maybelle’s Sticky Buns

Maybelle cooked for a lot of lucky families in her day. All she had to do to get the young’ns to come running to her kitchen was holler, “Get your buns in here!”

Ingredients
Dough Part A
2 1/4 tsp yeast
1 tsp sugar
1/4 c warm water (110° –115°F)
Part B
3 3/4 c flour
1/4 c sugar
1 tsp nutmeg
3/4 tsp salt
Part C
2/3 c evaporated milk
1/4 c water
1 egg
Filling
1/4 c brown sugar
1 tsp cinnamon
1/2 c cinnamon chips
Topping
1 1/3 c brown sugar
1/3 c light corn syrup
2 Tbsp margarine
1/3 c evaporated milk
1/8 tsp D.D. Williamson
Caramel Color Powder
1 c pecans (optional)

Directions:

  1. Combine Part A in a bowl. Set aside for at least 5 minutes.
  2. Combine Part B in a bowl; mix well. Set aside.
  3. Combine Part C.
  4. Add Parts A (yeast mixture) and C (egg/milk mixture) to part B (flour mixture) gradually.
  5. Turn dough onto lightly floured surface and knead about 8 minutes until dough is smooth and elastic. Flour, about 1/4 cup, may be used on hands to prevent sticking.
  6. Put dough in large greased bowl, turn to coat the top.
  7. Let dough rise for 45 minutes or so until dough has doubled in size.
    While bread is rising continue with step 8…
  8. Combine the topping ingredients in a saucepan.
  9. Bring to a boil, stirring constantly.
  10. Remove from heat.
  11. Grease 2 – 9” cake pans and place 1/2 cup pecans in each pan if you desire.
  12. Pour topping into pan.
    After dough has risen, continue…
  13. Punch dough down.
  14. Roll into a 24” by 10” rectangle.
  15. Coat dough with cooking spray.
  16. Combine filling ingredients and sprinkle evenly over the dough.
  17. Roll up. If you want large rolls, begin rolling from the short end. If you prefer small rolls, begin rolling from the long end.
  18. Cut into 1inch slices using dental floss.
  19. Place slices in pan, cover with plastic wrap coated with cooking spray, and put in fridge to rise 8-24 hours or so until the rolls double in size.
  20. Next morning…
  21. Preheat oven to 375°F.
  22. Bake for about 23 minutes.
  23. Run a knife around the edge of the pan and invert onto a serving plate.
  24. Eat and enjoy!

Tips:

 

  • These special cinnamon rolls are so tasty and since they are prepared the night before, all that is needed is a quick pop in the oven in the morning.
