Cousin Kelly’s Oatmeal Scotchies

Nothing goes together as well as Cousin Kelly’s Oatmeal Scotchies and a spot of tea. Their taste is to die for!

Part 1
5/8 c flour 85 g flour
1 tsp D.D. Williamson

1/2 tsp baking soda 1.2 g baking soda
1/4 tsp salt 1 g salt
1/4 tsp cinnamon 0.5 g cinnamon
Part 2
1/2 stick butter, margarine 57 g butter, margarine
6 Tbsp sugar 72 g sugar
6 Tbsp brown sugar 82 g brown sugar
1 large egg 54 g egg
1 tsp vanilla 2.5 g vanilla
Part 3
1 1/2 cup oats,
quick-cooking or old-fashioned
134 g oats,
quick-cooking or old-fashioned
5/6 c butterscotch chips 147 g butterscotch chips

Directions:

  1. Preheat oven to 375°F.
  2. Mix Part 1 and set aside.
  3. Beat Part 2 together in a mixing bowl.
  4. Gradually add Part 1 to Part 2.
  5. Stir in Part 3.
  6. Bake on ungreased cookie sheet for 7-8 minutes (for chewy cookies) or 9-10 minutes (for crisp cookies).
  7. Cool on baking sheet for 2 minutes before removing to a wire rack.
  8. Eat and enjoy!

Tips:

  • Makes about 2 dozen.
  • Feel free to jazz up the cookies by adding some coconut or your favorite nuts.
  • Another variety would be to use grated orange peel instead of vanilla.
