Turkey & Spinach Loaf

A twist on a classic.

Ingredients

1 large onion, finely chopped

1 Tbsp vegetable oil

2 large eggs

1/2 c skim milk

2 tsp lemon juice

2 tsp D.D. Williamson Caramel Color Powder

1 tsp salt

1 tsp dried basil

1/2 tsp dried oregano

1/2 tsp pepper

2 c of whole wheat bread crumbs (5 or 6 slices)

1 package (10 oz) frozen chopped spinach, thawed and squeezed dry

2 1/2 lbs lean ground turkey

1/2 to 1 c ketchup (optional)

1 Tbsp margarine, melted

Saute the onion in oil until tender; set aside.
Combine the eggs, milk, lemon juice, D.D. Williamson Caramel Color Powder, salt, basil, oregano, and pepper.
Add the bread crumbs, spinach, ground turkey, and onion. Stir to combine.
Shape and pat the meat into a 12” by 5” loaf pan or pat into a 13”x9”x2” greased baking dish or a greased large bread pan.
Spoon the ketchup over the top of the meatloaf.
Bake, uncovered, at 350°F for 30 minutes. Drizzle the top with the melted margarine. Bake for another 30-35 minutes. A meat thermometer should read 165°F.
Serve warm and enjoy!

The D.D. Williamson Caramel Color Powder gives the meatloaf a more traditional beef color yet with the turkey substitution it is a bit healthier and the eye appeal is just as pleasing.
If the color of the precooked meatloaf isn’t dark enough, you may try adding another teaspoon of the D.D. Williamson Caramel Color Powder to get the desired color.
